Bass Ceviche with Passion Fruit

Serves 4 / A fresh and easy appetizer. Prep tip: If you can’t find passion fruit, substitute four fresh or canned guava, available in natural and Latino markets. Serving tip: Serve with sturdy lettuce or endive leaves to scoop.

2 passion fruit

6 ounces fresh bass (160 grams)

Juice from 2 limes

3/4 cup finely chopped onion (0.8 ounces)

5 tablespoons finely chopped red bell pepper (0.6 ounces)

1/3 cup finely diced fresh mango

1-2 tablespoons chopped fresh cilantro

Extra-virgin olive oil

1. Cut passion fruit in half. Scoop out pulp and press through a fine-mesh sieve to remove seeds. Save some seeds for decoration.

2. Cut bass into 1-inch cubes and place in a bowl. Squeeze lime juice over fish; add onion, bell pepper, mango, cilantro, and salt and pepper to taste. Stir in a splash of olive oil, then passion fruit pulp and juice.

3. Mix well and serve, decorated with passion fruit seeds.

Could an argument be made that spiked supplements are in reality mislabeled pharmaceuticals? The manufacturers know what the ingredients are. They have neglected to proper label their pharmaceutical product. Could this be a situation to be addressed by the pharmaceutical industry with punishment in accordance with mislabeled pharmaceuticals?
