Here’s a little history lesson on organic dairy. Before 2009, the U.S. organic dairy market looked unstoppable. Following the U.S. Department of Agriculture’s (USDA) 1990 creation of the National Organic Program (NOP), dairy proved the poster-child for success in organic. The industry grew out of commodity staples like milk and produce, and then organic packaged foods and snacks followed suit as the value proposition of organic shifted from a focus on sustainable agriculture to an assurance of clean health.
