Serves 4/ Any mix of tropical fruits will make an excellent low-fat dessert. We've selected this mix based on those most often available in U.S. markets, but if you come across any other favorites, don't hesitate to toss them in.
1 cup nonfat yogurt
1 banana
1/4 cup lime juice
1/4 cup orange juice
2 tablespoons honey
1/4 teaspoon nutmeg
1 mango
1 pineapple
1/2 honeydew melon or cantaloupe
Juice of 1/2 lime
1 starfruit
4 sprigs of mint
1. Combine first six ingredients in a food processor fitted with a steel blade. Process until well-blended and smooth. Set aside.
2. Peel and cut the mango, pineapple and melon into chunks and toss with lime juice. Arrange on individual salad plates, topping each portion with slices of starfruit. Drizzle each with dressing and garnish with sprigs of mint.
