Yields 1 10" round pizza

Beans on a pizza? You'll be surprised at what a great pair they make! Load this pizza with all your favorite nacho toppings and make it as spicy as you dare.


1/2 basic pizza dough recipe
1/2 green or red bell pepper, diced
1/2 white onion, diced
1 15-ounce can black beans, drained and rinsed
2 tablespoons fresh cilantro, minced
3/4 cup salsa
1 cup (3 ounces) Monterey Jack-style soy cheese, grated
Pickled jalapeños (optional)

1. Preheat oven to 475°F. Sauté green pepper and onion in a lightly oiled skillet just until wilted. Stir in black beans and cilantro.
2. On a floured surface, roll out pizza dough into desired size and place on a pizza screen or baking sheet dusted with cornmeal. Turn outer edge under 1/2 inch to form a rim.
3. Spread salsa over pizza and top with cheese, bean mixture and jalapeños. Bake until cheese melts and crust turns golden brown, about 8 minutes.
