Quick Bean Guacamole Yields 21/2 cups Here's a welcome version of traditional guacamole, with all of the rich taste but decidedly less fat.

1 15-ounce can organic navy or great Northern beans, rinsed and drained
1 ripe Haas avocado, scooped out in chunks
3/4 cup bottled salsa (mild or hot, according to taste)
1 to 2 tablespoons lime juice
Salt to taste
3 tablespoons finely chopped fresh coriander for garnish
1. Place beans, avocado, salsa and 1 tablespoon lime juice in a food processor. Pulse just enough to create a coarse puree. Add extra lime juice and salt to taste. Transfer to a small serving bowl and garnish with coriander.
