| Tropical Salsa September, 2006 2 medium peaches, peeled and chopped 1/4 cup chopped fresh papaya 1 medium yellow or red tomato, chopped 1/4 medium red bell pepper, seeded and finely chopped 1/4 cup chopped green onions 1 1/2 tablespoons fresh lime juice 1 teaspoon minced fresh ginger 2 tablespoons chopped fresh cilantro 1 tablespoon chopped fresh mint 1. Combine all ingredients in a medium bowl. Stir to mix. Refrigerate for up to 2 hours.
