Veggie Roll-Ups
Serves 4 / You can assemble these in no time and take them along to munch on before class.
4 large reduced-fat flour tortillas
1 cup hummus or feta cheese, crumbled
4 scallions, chopped
1 cup shredded lettuce
1/2 to 1 cucumber, chopped
1. Spread tortillas with hummus or cheese. Top with vegetables. Roll up and serve.
