Asian Noodle Salad with Toasted Sesame Dressing

Makes 4 to 6 servings / The full-bodied aroma of sesame seeds and toasted sesame oil gives this dish deep flavor. Add steamed broccoli and tofu to make a nutritionally complete one-dish meal. Great for lunch boxes, too!

Prep Time: 15 minutes
Cooking Time: 10 to 12 minutes

Salad:

1 8-ounce package soba noodles
1/4 cup chopped cilantro leaves
1/4 cup toasted sesame seeds


Dressing:

2 tablespoons toasted sesame oil
3 tablespoons tamari or shoyu
3 tablespoons balsamic vinegar
1 tablespoon maple syrup
1 tablespoon hot pepper oil


Optional:

Chopped red cabbage
Finely sliced radishes
Pan-fried tofu cubes
Steamed broccoli florets
Sliced scallions

1. Cook soba noodles according to package directions. Drain and rinse in colander.

2. Combine all dressing ingredients in a small bowl; whisk together.

3. Place drained noodles in a large bowl. Add dressing, cilantro and sesame seeds; toss gently. Add optional chopped vegetables and toss again.

Could an argument be made that spiked supplements are in reality mislabeled pharmaceuticals? The manufacturers know what the ingredients are. They have neglected to proper label their pharmaceutical product. Could this be a situation to be addressed by the pharmaceutical industry with punishment in accordance with mislabeled pharmaceuticals?
