Blackberry-Coconut Shake

This simple antioxidant-rich shake is perfect for an afternoon snack or kid-friendly dessert.

Serves 4 / This simple but luscious shake is perfect for an afternoon snack or kid-friendly dessert. Frozen banana adds sweetness and rich texture without extra sugar and fat; keep several sliced bananas in your freezer for last-minute shake prep.

1 1/2 cups low-fat coconut ice cream or sorbet

1 cup low-fat (1 percent) milk or unsweetened rice milk

1 small banana, peeled, sliced and frozen

6-7 ounces fresh blackberries

2 tablespoons shredded coconut, for garnish

1. In a blender or food processor, combine ice cream or sorbet, milk, banana, and all but 8 blackberries. Purée until thick and smooth. Immediately divide among cold glasses. Sprinkle with shredded coconut, garnish with reserved blackberries, and serve immediately.

PER SERVING: 218 cal, 6g fat (0g mono, 1g poly, 5g sat), 5mg chol, 3g protein, 40g carb, 3g fiber, 53mg sodium
