Makes 3 cups Prep Time: 10 minutes

Juice of 2 limes
Juice of 2 lemons
1 tablespoon soy sauce
1/2 teaspoon sesame oil
1 tablespoon brown sugar
1 teaspoon creamy organic peanut butter
1 teaspoon Asian chile sauce
1/2 cup diced cooked shrimp
1 ripe tomato, peeled, seeded and diced
3 tablespoons diced onion
1 tablespoon diced red pickled ginger
1 tablespoon minced garlic
1/4 cup julienned fresh basil leaves
1 tablespoon finely minced lemongrass
1/2 cup chopped fresh cilantro
Salt and black pepper to taste

1. In a large bowl, combine the lime and lemon juices with the soy, sesame oil, brown sugar, peanut butter and chile sauce.
2. Add all remaining ingredients and toss quickly. Chill and serve with grilled chicken or fish, or as an appetizer with tortilla chips.
